Optimización de las regulaciones industriales (la toma de decisiones) para minimizar las pérdidas de aceite de la variedad ‘Arbequina’

Abstract
La separación del aceite es una etapa muy importante en el proceso de producción del
aceite de oliva virgen, ya que tiene influencia directa tanto en la calidad del aceite como
en la rentabilidad de las almazaras, plantas industriales de elaboración. Para minimizar las
pérdidas y mejorar la eficiencia de extracción, se deben considerar las condiciones más
favorables desde las características de la oliva, condiciones de preparación de la masa,
hasta las regulaciones de la separación (centrifugación). Las diferencias constructivas de
los diferentes fabricantes de decanters hace que las distintas regulaciones de proceso no
tengan la misma eficacia en todos los casos.
